Winemaking notes
The grapes are harvested by hand and vinified in the winery of the property. After destemming and light crushing, the grapes are directed to stainless steel tanks, where alcoholic fermentation takes place. During this phase, gentle macerations are carried out, at a control temperature. Maturation takes place in used French (75%) and new American (25%) oak barrels for a period of about 12 months.
Viticultural notes
The majority of the soil is composed of shale. The latter has the ability to store the heat of the day and redistribute it throughout the night. This reduces temperature differences and contributes to the good ripening of the grapes. The soils are low in organic content and phosphorus, moderately rich in potassium and acid, their texture is sandy and loamy and they contain a large amount of large elements.
Tasting notes
Aromas of good intensity, with a touch of black fruit, such as prune and cherry, as well as cocoa and chocolate. Balsamic, resin and menthol aromas are also predominant. On the palate, it has good volume, soft but firm tannins, balanced acidity, hints of black fruits, a slight florality and a long finish.
Pairing notes
To be enjoyed with red meat or large game. It will also make a great match at the end of a meal with strong cheese.
