Winemaking notes
After gentle destemming, the grapes undergo skin maceration before being pressed. Following cold settling, alcoholic fermentation takes place in stainless steel tanks and French oak barrels at a controlled temperature between 14 °C and 18 °C. During the alcoholic fermentation period, the existing batches are subjected to the bâtonnage technique, where they remain for approximately eight months, enhancing texture and aromatic complexity.
Viticultural notes
Grapes from selected varieties grown at Quinta do Sairrão. On this estate, the white grape varieties are planted at higher altitudes, where the cooler temperatures allow the fruit to achieve optimal ripeness and balanced acidity.
Tasting notes
Bright, pale color with citrus nuances. The nose is intense and complex, revealing notes of white fruit, flowers, and citrus, complemented by subtle, well-integrated oak. On the palate, it shows good volume and a refreshing, well-balanced acidity, with white fruit flavors, delicate herbal hints, and a long, elegant finish.
Pairing notes
This wine does not require decanting. Serve between 10 °C and 12 °C. It pairs beautifully with fish dishes.
