Winemaking notes
Fermentation takes place in stainless steel tanks with 15–18 days of skin maceration at controlled temperatures between 27 and 31°C using a gentle shower system to wet the cap. Ageing lasts at least 3 years, including 18–24 months in medium-sized oak casks followed by bottle refinement to enhance complexity and ageing potential.
Viticultural notes
Nebbiolo grown on calcareous marl soils of marine origin from the Tortonian period, rich in microelements. Vines are trained using the Guyot system and hand harvested after summer thinning to control yields. Careful canopy management preserves freshness and aromatic balance.
Tasting notes
Bright garnet red colour. The nose is complex and elegant with notes of rose petals, juniper berries and fine spices. The palate is full and structured, with silky tannins, remarkable balance and long persistence. A refined and expressive Barolo with excellent ageing potential.
Pairing notes
Serve at 17–18 °C. Ideal with mushroom pasta, braised meats, game and aged cheeses. Its structure and elegance make it a great gastronomic wine with strong ageing potential.
