Winemaking notes
Both grapes are harvested and fermented separately in temperature-controlled (between 12 and 16°C) stainless steel vats. While the Sauvignon Blanc is being vinified without its skin for 15 to 18 days, the Garganega macerates 12 hours before fermenting for 20 to 22 days. The Sauvignon Blanc ends the formation in barrels for 3 months before being assemble with the Gargenaga, previously fermented in stainless-steel vats.
Viticultural notes
From Serego vineyard to Gargagnago, common to S. Ambrogio di Valpolicella. Red tight sediment with enough humus on an Eocene limestone soil. This type of soil on a cooler microclimate from Adige River, creates the best conditions for great white wine production.
Tasting notes
Straw-yellow colored with green tints. Strong aromas of elderflower, tropical fruits and ends with freshly cut grass. Fresh in mouth with a pleasant balance brought by its structure. Finish is elegant, attractive, dry, and fruity.
Pairing notes
Great as an aperitif, this wine pairs well with appetisers, cold cuts, seafood platter, grilled chicken, and creamy pasta. Also, with fresh or slightly ripened goat cheese. Served chill at 10°C or 12°C.
