Winemaking notes
The ancient Valpolicella's region of traditional grapes, Corvina, Rondinella and Molinara, are picked in hillside sites to be laid out for 'Appassimento' (a wine processing technique in which harvested grapes go through a drying process prior to fermentation) on bamboo racks in drying lofts during the winter months. The grapes shrink in the drying process to make aromatic, fruity wines that are smooth and refined, with a wonderful balance of alcohol, sugar and structure. When the drying process is complete, the grapes are gently pressed and the must is fermented until it reaches the desired balance of alcoholic strength and sweetness.
Viticultural notes
This historic red dessert wine of the Valpolicella region. Opus Sanctorum 'Angelorum', which means the Work of the Holy Angels. The Classico vineyards lead to riper, healthier grapes with more complex tannic and phenolic profiles. Its patchwork of aspects facing in every direction, make the region the most of the northern Italian sunshine it receives.
Tasting notes
The colour is an opaque ruby red. The nose has cooked cherries and fruit preserved in spirit. On the palate there is a complex and attractive mixture of sweetness and acidity with a long finish..
Pairing notes
Excellent as an after-dinner wine. Pairs with country-style desserts and with fruit, tarts, pastries and panettone. Good also with gorgonzola cheese.
