Winemaking notes
A soft crushing and cryomaceration of 20% of the grapes, for 24 hours at 5°C. The remaining 80% is
fermented traditionally in stainless steel tanks using cultured yeasts. The malolactic fermentation is
taken as far as vintage conditions require. Fermentation time takes place between 15-20 days. Fermentation temperature:12-16°C. The wine is then matured for 4 months in stainless steel tanks of 100 to 500 hl. 20% of the wine is aged in oak barrel.
Viticultural notes
The grapes are sourced from Monteforte d'Alpone, a commune in the historic Soave Classico zone. The soil has a deep and loose-texture, with large areas of basalt and volcanic rock. Levarìe: refers to the east-facing slopes of the Soave Classico area, which benefits from the light and from the cool morning sun. The result is wines that are particularly soft and elegant.
Tasting notes
Pale straw yellow with greenish tinges. Fruit and flowers on the nose with hints of apples and pears
accompanied by delicate citrus aromas. Fresh tasting with good structure, good supporting acidity,
with a long almondy finish.
Pairing notes
A classic Italian food wine, good with a wide range of dishes thanks to its attractive and refreshing
acidity. Ideal served as an aperitif or with starters, soups, pasta, fish or simple rice dishes with
Mediterranean flavours.
