Winemaking notes
The best bunches of grapes, harvested by hand, are left to dry (appassimento), thus losing 35 to 40% of their weight and gaining in sugar concentration. Gentle pressing, 45 days of alcoholic fermentation in large Slavonian casks, at low natural temperature (winter). Then comes the malolactic fermentation.
Viticultural notes
The Mazzano vineyard is located in the municipality of Negrar at 350/415m above sea level. North-East South-West exposure (which follows the outline of the hills), terraces supported by stone walls. Brown soil on Eocene marls.
Tasting notes
Dark robe of an opaque and dense red. A powerful then impressive bouquet offering aromas of black currant, blackberries with woody nuances as well as cinnamon. On the palate, a powerful and pleasant wine, flavors of ripe plums, cherries with attractive notes of vanilla as well as cloves. Strong structure but the wine is balanced and graceful at the same time. A very long and complex finish.
Pairing notes
Grilled red meats, game birds, rabbit with herbs or a risotto with morels. Slightly spicy cheeses, such as Parmegiano Reggiano and Pecorino, soft cheeses with bloomy rinds such as: Le Chaource, Brillat-Savarin, Brie and Bleu d'Auvergne.
