Winemaking notes
Hand-picked in small crates, followed by meticulous sorting (40 people). Partial destemming (50%), followed by cooling of the bunches (8 to 10°C) for a 5-day pre-fermentation cold maceration. Fermentation in small-volume stainless steel tanks, with punching down and pumping over adapted to each appellation to extract color and aroma. Gentle gravity pressing ensures delicate extraction. Aged on fine lees in French oak barrels.
Viticultural notes
On the southern hill of Beaune, a vineyard of 2 hectares, mid slope facing South-East.
Tasting notes
Bright ruby colour. Delicate fragrances of violet mixed with intense aromas of ripe black cherries. Subtle vanilla note. Well-balanced and complex with a very pure fruit. Tight texture. Finely grained tannins. Long and fruity aftertaste.
Pairing notes
It is perfectly matched with red meat grilled or en sauce and all cheeses, especially the local cheeses like Epoisses or Citeaux.
