Winemaking notes
The Pinot Noir grapes are carefully hand-harvested and then destemmed before undergoing fermentation in open tanks. This vinification includes regular punching down to encourage the extraction of aromas and tannins. The aging takes place in French oak barrels, with a portion being new, for a period of 12 to 18 months. This process develops aromatic complexity while maintaining the wine's natural balance.
Viticultural notes
The vineyard is located on the central hill of Beaune, one of the largest crus in the region. The soil, composed of "grèves," a mixture of sand, small pebbles, and silt, allows for excellent drainage, promoting rapid maturation of the grapes. The full eastern exposure on a sunny slope optimizes aroma development and grape quality.
Tasting notes
This wine presents a beautiful ruby color. On the nose, one discovers floral notes of peony alongside intense aromas of ripe red fruits such as strawberry and cherry, enhanced by hints of coffee and spices. On the palate, it reveals excellent balance, with a complex and refined texture. The tannins are elegant and well-structured, and the oak is perfectly integrated. The finish is long, with a spicy touch.
Pairing notes
This Pinot Noir is best enjoyed at a temperature between 16 and 18°C (60-65°F). It pairs wonderfully with roasted or braised meats, particularly a veal tenderloin with mushrooms (chanterelles, porcini, truffles), as well as game dishes and cheeses.
