Winemaking notes
Aging for 10 months, with a rigorous selection of the grape clusters. Fermentation in stainless steel tanks at low temperature (16°C) for 15–20 days. Aging in stainless steel tanks and French oak barrels (1 to 6 years old, 228 L) with traditional Burgundian toasting, bringing roundness and richness.
Viticultural notes
The Chardonnay grapes come from across the Burgundy region, and more specifically from the sub-regions of Auxerrois, Côte Chalonnaise, and Mâconnais. Domaine Chanson also owns 1.7 hectares in Côte Chalonnaise and Chassagne-Montrachet.
Tasting notes
Pale gold color. Menthol notes overlay aromas of citrus and white flowers, with a few subtle woody nuances. The attack is crisp and energetic, supported by a solid structure. Well-built acidity. Lovely freshness on the finish.
Pairing notes
Pairs perfectly with terrine, fish, charcuterie, as well as certain goat cheeses.
