Winemaking notes
Produced using the traditional Appassimento method: grapes are harvested and naturally dried for about three months to concentrate sugars and aromas. After gentle pressing and destemming, fermentation lasts around 35 days in large oak barrels at low temperatures, resulting in a rich, naturally sweet wine.
Viticultural notes
Grapes come from hillside vineyards in the historic Valpolicella Classico area (Marano, Negrar, Sant’Ambrogio), on calcareous and marl soils. Blend of Corvina, Rondinella and Molinara. Hand-harvested grapes are carefully selected to ensure concentration and quality.
Tasting notes
Deep, dense red colour. The nose shows ripe cherry and jammy aromas with hints of cinnamon and cloves. The palate is rich and structured, with firm yet elegant tannins. The balance between sweetness and acidity brings freshness and a long, ripe cherry finish.
Pairing notes
Serve at around 15°C. Ideal as a dessert wine with pastries, chocolate, panettone and dried fruit. Also pairs well with blue and goat cheeses. Can be enjoyed on its own after dinner or used as a base for cocktails.
