Winemaking notes
After gentle pressing, fermentation takes place in stainless steel tanks at controlled temperatures between 20 and 22°C with selected yeasts, followed by a maceration period of approximately 15 days on the skins to extract color and structure. Malolactic fermentation is carried out, after which the wine remains in stainless steel tanks at controlled temperature until bottling in order to preserve fruit purity and freshness.
Viticultural notes
Tripoggi is located in Cinigiano, in the Val d’Orcia in Tuscany, where vineyards are cultivated under certified organic practices at an altitude of 110 meters with a west-facing exposure. The soils are medium-textured, predominantly sandy with clay components, allowing a good balance between drainage and water retention.
Tasting notes
The wine displays a very intense ruby red color with violet reflections and opens on a rich and expressive nose dominated by red fruit aromas, particularly blackberry and cherry. On the palate, it shows a solid structure supported by balanced acidity, with a subtle spicy touch and a persistent fruit character that echoes ripe cherry notes, leading to a harmonious and approachable finish.
Pairing notes
This wine is particularly versatile at the table and pairs well with grilled meats and vegetables, hearty legume-based dishes, and pasta with meat sauces. It also complements rustic cuisine such as cured meats, crusty bread, and flavorful cheeses. It is best served at around 18°C and can be enjoyed now or cellared for more than 10 years thanks to its structure and balance.
