Winemaking notes
Hand-picked in small crates, followed by meticulous sorting. Whole cluster pressing. Fermentation in barrels at low temperature (16°C) for 15-20 days, promoting complexity and aromatic freshness. Aged on fine lees in French oak barrels (20% new barrels, aged 1 to 6 years, 228L). Careful selection of coopers and toasting to highlight each terroir.
Viticultural notes
This 1.9-hectare vineyard is located mid-slope, close to the prestigious Corton-Charlemagne vineyards. It shares the same geology and altitude but differs with its full eastern exposure. The terroir is described as exceptional, marked by intense minerality.
Tasting notes
Pale gold in colour. The nose is very fresh, revealing delicate citrus notes intertwined with white-fleshed fruit aromas, supported by a distinctive mineral character typical of the appellation. On the palate, the attack is very precise and lively, with saline and iodine nuances. The wine gains complexity through its finely chiseled texture and finishes long and precise.
Pairing notes
Pairs beautifully with shellfish, pan-seared scallops and turbot in cream sauce. Also complements cheeses such as Époisses, Cîteaux and Comté.
