Winemaking notes
The grapes were hand-harvested in small crates and carefully sorted. Whole-cluster pressing was followed by barrel fermentation at low temperature (16°C) for 15–20 days to enhance aromatic freshness and complexity.
The wine was aged on fine lees in French oak barrels (20% new oak, barrels aged 1 to 6 years, 228L) in the estate’s 15th-century Bastion cellar. Careful selection of coopers and toast levels ensures each terroir is highlighted.
Viticultural notes
An exceptional 2-hectare parcel located in close proximity to the renowned Montrachet vineyard. The soil is predominantly clay-limestone, resting on the famous Chassagne bedrock.
South-West exposure at the opening of the Saint-Aubin road benefits from cool air currents, contributing purity and aromatic freshness to the wine.
Tasting notes
Beautiful pale gold color. The nose is complex, combining floral fragrances with citrus zest and apricot aromas, complemented by honeyed nuances and perfectly integrated oak.
On the palate, the wine is complex and well-structured. It shows precision and tension on a refined texture, leading to a long and elegant finish.
Pairing notes
Pair this wine with foie gras, seafood, grilled fish or fish in sauce, regional cheeses (Cîteaux, Époisses, Brillat-Savarin) and certain goat cheeses.
