Winemaking notes
The grapes are hand-harvested and carefully sorted. A cold pre-fermentation maceration is carried out to preserve the aromatic finesse of Pinot Noir. Fermentation takes place in stainless-steel vats, with extraction carefully adapted to the appellation to maintain balance and elegance. The wine is aged in French oak barrels for approximately 19 months, with a proportion of new oak providing structure and complexity while preserving fruit purity.
Viticultural notes
The Clos des Mouches climat benefits from an exceptional terroir combining favorable exposure and limestone soils, giving the wine finesse, depth and ageing potential. A mild winter and contrasting spring led to early vine development. Summer was marked by significant sanitary pressure. Harvest took place from September 11th to September 21st, 2024.
Tasting notes
The wine displays a bright ruby color. The nose reveals intense aromas of ripe red and black cherries, complemented by delicate floral notes and subtle spice. On the palate, the attack is ample and precise. The structure is elegant, supported by fine, well-integrated tannins. The finish is long, harmonious and gently spiced, reflecting the signature style of great Côte de Beaune Pinot Noir.
Pairing notes
Best served between 16–18°C. Pairs beautifully with roasted red meats, game dishes, beef bourguignon and aged cheeses.
