Winemaking notes
After a particularly mild winter, spring took over with summer temperatures in March and, as an immediate consequence, early budburst and very sustained vine growth. May began with a few frosts without significant consequences which quickly gave way to a nice mildness. June was hot with some rain and in the process, the summer was marked by several fairly long heat waves. On the plots made up of clay soils, the vines resisted the water stress better caused by the low accumulation of water between March and June and the summer drought. The harvest in Burgundy began around August 20, a historically early date for the region. At Chanson, they began on August 24 under a blazing sun. The red wines of the 2020 vintage are generous, concentrated, with a very good definition of the terroir.
Viticultural notes
In the town of Savigny-les-Beaune, in a privileged site at mid-slope, at the entrance to the Savigny valley, at the bottom of the hillside of Jarons, this vine, exposed North-East, takes its name from the Latin " Dominus", because it belonged to the "Lord" of Savigny. Clay-limestone.
Tasting notes
Purple dress. Notes of violet rose on aromas of ripe red berries, cherries with a subtle woody note. Beautiful intensity, velvety texture. Lots of freshness on the finish.
Pairing notes
Roasted meats or in sauce, game, regional cheeses (Epoisses, Langres, Citeaux, Brillat-Savarin).
